Description

  • 2 cups shredded cooked turkey
  • 1 cup wild rice blend, rinsed and drained
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 6 cups chicken or turkey broth
  • 1 cup heavy cream or half-and-half
  • to taste dried thyme, salt, pepper
  • optional: mushrooms, spinach or parsley

  • Instructions

    1. In a large heavy-bottomed pot, melt butter over medium heat.

    2. Add chopped onion, carrots, and celery; sauté until vegetables are soft, about 5–7 minutes.

    3. Stir in minced garlic and cook for 30 seconds.

    4. Sprinkle flour over the vegetables and stir constantly for 1–2 minutes to form a roux.

    5. Gradually whisk in broth, one cup at a time, until smooth and slightly thickened.

    6. Add wild rice blend, reduce heat to low, and simmer uncovered for 35–45 minutes until rice is tender.

    7. Stir in shredded turkey and simmer for 10–15 minutes to heat through.

    8. Lower heat and slowly stir in heavy cream until fully incorporated.

    9. Season with dried thyme, salt, and pepper to taste.

    10. Remove from heat and let rest for 5–10 minutes before serving.

    11. Garnish with optional parsley or a squeeze of lemon if desired.
