1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
2. In a bowl, combine rice, French onion soup, chicken broth, sautéed onions, thyme, garlic powder, salt, and pepper.
3. Pour rice mixture into the prepared dish and smooth into an even layer.
4. Season chicken with salt and pepper and place on top of the rice mixture, then drizzle with olive oil.
5. Cover tightly with foil and bake for 40 to 45 minutes until rice is tender and liquid absorbed.
6. Remove foil, sprinkle cheese and crispy fried onions over chicken, and bake uncovered for 10 to 15 minutes until golden and bubbly.
7. Check chicken reaches 165°F (74°C), then let rest 5 to 10 minutes before serving.
8. Garnish with parsley and serve warm with a salad or vegetables.
