1. Preheat oven to 325°F and line a 9×13-inch pan with parchment paper.
2. In a bowl combine graham cracker crumbs, 1/4 cup sugar, and melted butter then press into the pan and bake 8 to 10 minutes.
3. Beat cream cheese and 3/4 cup sugar until smooth, add eggs one at a time, then mix in eggnog, vanilla, rum extract, and nutmeg.
4. Optional: chill filling 10 minutes, then pour over crust and smooth the top.
5. Bake 35 to 40 minutes until edges are set and center slightly jiggles.
6. Cool in oven with door cracked for 10 minutes, then on a rack 1 hour, then refrigerate at least 4 hours.
7. Lift bars using parchment, slice with a hot knife wiped clean between cuts.
8. Garnish with grated nutmeg or whipped cream before serving.
9. Store refrigerated up to five days or freeze wrapped for up to two months.
