Ingredients

  • 2 lbs boneless skinless chicken breast
  • 4 medium carrots, peeled and chopped
  • 3 potatoes, cubed
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • salt and pepper to taste
  • fresh parsley for garnish (optional)

  • Instructions

    1. lightly spray or line the crockpot

    2. place chopped carrots, potatoes, onion, and garlic in the bottom of the crockpot

    3. lay chicken breasts on top of the vegetables

    4. season with thyme, rosemary, salt, and pepper

    5. pour chicken broth over all ingredients

    6. cover and cook on low for 6–7 hours or high for 3–4 hours

    7. shred chicken with two forks and stir to combine before serving

    8. garnish with parsley if desired
