Ingredients
2 boneless, skinless chicken breasts, diced
8 oz penne or whole wheat pasta
2 tablespoons olive oil
3 garlic cloves, minced
1/2 cup grated parmesan cheese
1 cup milk (or light cream)
1 tablespoon flour (optional, for thickening)
Salt and black pepper to taste
1 tablespoon chopped parsley (optional, for garnish)
Instructions
1. Cook pasta according to package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden and fully cooked, about 6–8 minutes.
3. Add garlic to the pan and cook for 1 minute until fragrant.
4. Sprinkle in flour (if using), stir, then slowly add milk. Simmer and stir until slightly thickened.
5. Add parmesan cheese, stirring until melted and smooth.
6. Toss in cooked pasta and season with salt and pepper.
7. Garnish with chopped parsley and serve hot.
