This easy grilled chicken Caesar salad combines smoky marinated chicken, crisp romaine, and creamy homemade Caesar dressing for a healthy, flavorful meal perfect for weeknights or summer gatherings.

1. whisk olive oil lemon juice garlic oregano salt and pepper to make the chicken marinade
2. coat chicken breasts in marinade and refrigerate for at least 20 minutes
3. preheat grill or grill pan over medium high heat and oil the surface
4. grill chicken for 5 to 6 minutes per side until cooked through then rest for 5 minutes
5. slice rested chicken into strips
6. whisk greek yogurt dijon mustard worcestershire sauce lemon juice garlic and anchovy paste for the dressing
7. wash and dry romaine lettuce then chop and place in a large bowl
8. add cherry tomatoes croutons and a drizzle of dressing then toss gently
9. top salad with sliced grilled chicken and sprinkle with parmesan cheese
10. serve with extra dressing on the side
