1. Heat the skillet over medium and add olive oil or butter.
2. Add ground beef and cook until browned, breaking it up as it cooks; drain excess grease if needed.
3. Stir in onion and cook until softened, then add garlic and sauté briefly.
4. Pour in crushed tomatoes and tomato sauce or broth, season with Italian seasoning, salt, and pepper, and stir to combine.
5. Add uncooked pasta to the sauce, stirring to coat; add a splash of water or broth if needed.
6. Cover and simmer on medium-low for 10–12 minutes, stirring occasionally to prevent sticking.
7. Remove lid, stir in half of the mozzarella and Parmesan until melted, then top with remaining mozzarella and cover until cheese melts.
8. Taste and adjust seasoning, garnish with parsley, and serve hot.
