Instructions
1. Prepare Your Tortillas: Lay out four of your tortillas on a clean work surface. Using a small, sharp knife or a clean pair of kitchen scissors, carefully cut out jack-o’-lantern faces (eyes, nose, and a jagged mouth) from the center of each of these four tortillas. These will be the “top” tortillas.
2. Assemble the Bottom Layer: On the remaining four whole tortillas (these will be the “bottom” tortillas), evenly sprinkle about 1/4 cup of the mixed shredded cheese over each, leaving a small border around the edge. If using optional fillings like chicken or beans, spread them over the cheese now.
3. Place the Jack-O’-Lantern Tops: Carefully place one of the cut-out jack-o’-lantern tortillas directly on top of each cheese-covered bottom tortilla, aligning the edges. Gently press down to ensure they are somewhat sealed.
4. Heat Your Pan: Melt 1/2 tablespoon of butter or heat 1/2 tablespoon of olive oil in a large non-stick skillet or griddle over medium-low heat. Ensure the pan is evenly coated.
5. Cook the Quesadillas: Carefully transfer two quesadillas to the hot skillet. Cook for about 3-4 minutes per side, or until the bottom is golden brown and crispy, and the cheese inside is fully melted and gooey. The cut-out face should allow you to see the melted cheese bubbling through.
6. Flip and Finish: Using a wide spatula, carefully flip the quesadillas and cook for another 3-4 minutes on the second side until golden brown. Remove from the pan and repeat with the remaining quesadillas, adding more butter or oil as needed.
7. Serve Immediately: Transfer the cooked quesadillas to a cutting board, slice them into wedges, and serve warm with your favorite dips.
