1. Set Instant Pot to Sauté and heat olive oil.
2. Season chicken breasts with salt and pepper and sear for 2–3 minutes per side until golden, then remove and set aside.
3. Add garlic and sun-dried tomatoes to the pot and cook for 30 seconds until fragrant.
4. Pour in chicken broth and scrape up browned bits from the bottom.
5. Stir in italian seasoning and crushed red pepper flakes.
6. Return chicken to the pot, secure the lid, set valve to sealing, and pressure cook on high for 8 minutes.
7. Allow a natural release for 5 minutes, then quick release remaining pressure and remove chicken.
8. Switch to Sauté, stir in heavy cream and parmesan, and whisk until sauce thickens.
9. Return chicken to the sauce and spoon coating over the top.
10. Garnish with chopped parsley before serving.
