Description

Ingredients

  • 1 lb boneless skinless chicken breasts cut into chunks
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 bell pepper diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 3/4 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

  • Instructions

    1. Set the Instant Pot to sauté and heat olive oil.

    2. Add chopped onion and cook until translucent, about 2 minutes.

    3. Stir in garlic and cook for 30 seconds.

    4. Add chicken, salt, pepper, and Italian seasoning and sauté until lightly browned, about 3 minutes.

    5. Pour in chicken broth and scrape the bottom to deglaze.

    6. Add carrots and bell pepper and secure the lid.

    7. Pressure cook on high for 4 minutes then perform a quick release.

    8. Stir in broccoli florets, replace the lid, and let steam for 2–3 minutes using residual heat.

    9. Garnish with parsley or lemon wedges and serve.
