  • Instructions

    1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook, stirring occasionally, for 5-7 minutes until the vegetables begin to soften. They should look slightly translucent and tender, but not browned.

    2. Stir in the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring the mixture to a gentle boil.
