1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
2. Whisk together maple syrup, Dijon mustard, soy sauce, minced garlic, 1 tbsp olive oil, lemon juice, salt, and pepper until smooth.
3. Toss mixed vegetables with remaining 1 tbsp olive oil, salt, and pepper, then spread them around the edges of the sheet pan.
4. Place salmon fillets in the center of the pan and brush each generously with the maple Dijon glaze, reserving some for later.
5. Bake for 12–15 minutes until salmon flakes easily and vegetables are tender, brushing on reserved glaze halfway through.
6. Optional: switch to broil for 1–2 minutes to caramelize the glaze, then remove and let rest for 1–2 minutes before serving.
