1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
2. Pat chicken dry, season both sides with salt, pepper, and half the oregano, drizzle with 1 tbsp olive oil, and set aside.
3. In a large bowl, toss zucchini, cherry tomatoes, and onion with remaining olive oil, garlic, lemon juice, oregano, salt, and pepper.
4. Spread the seasoned vegetables evenly on the baking sheet and nestle the chicken pieces among them.
5. Roast for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender with lightly caramelized edges.
6. Remove from oven and, if desired, sprinkle crumbled feta and fresh parsley over the top.
7. Serve directly from the sheet pan, pairing with rice, couscous, or salad for a complete family-style meal.
