1. preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish with olive oil or non-stick spray
2. pat chicken breasts dry with paper towels, rub with olive oil, and season with salt and pepper
3. in a bowl, combine cream cheese, Greek yogurt, mozzarella, Parmesan, garlic, spinach, and artichoke hearts and mix until creamy
4. place chicken breasts in the dish and spoon the spinach artichoke mixture evenly over each breast
5. bake for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (74°C)
6. if desired, broil for 2 to 3 minutes until the topping is lightly golden
7. let rest for 5 minutes before serving and garnish with parsley and lemon zest
