These Easy Peppermint Bark Brownie Bars combine boxed brownie mix with a white chocolate peppermint bark topping for a simple, festive Christmas dessert that’s perfect for baking with kids.

1. Preheat oven to 350°F and line a 9×13-inch pan with parchment paper.
2. In a bowl combine brownie mix, eggs, oil, and water and stir until just smooth.
3. Spread batter evenly in the prepared pan and bake until a toothpick comes out with moist crumbs, about 20–25 minutes.
4. Let the brownies cool completely on a wire rack before adding the topping.
5. Melt white chocolate chips in 20-second microwave bursts, stir in peppermint extract, then pour over cooled brownies.
6. Sprinkle crushed candy canes (and optional sprinkles) over the melted chocolate, then chill for at least 30 minutes.
7. Use parchment overhang to lift brownies from the pan and slice into bars.
8. Serve immediately or store in an airtight container between layers of parchment paper.
