1. Crush Oreo cookies into fine crumbs using a food processor or a sealed bag and rolling pin.
2. Mix cookie crumbs with softened cream cheese and peppermint extract until smooth and well combined.
3. Portion the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
4. Chill the truffle centers in the refrigerator for at least 30 minutes.
5. Melt semi-sweet chocolate chips (with coconut oil if using) in the microwave or a double boiler until smooth.
6. Dip chilled truffle balls into the melted chocolate, tap off excess, and return to the parchment-lined sheet.
7. Sprinkle crushed candy canes or other decorations over the coated truffles before the chocolate sets.
8. Refrigerate the truffles for 15–20 minutes until the coating is firm, then serve or store in an airtight container.
