  • 1 1/2 cups rolled oats (old-fashioned)
  • 1 cup almond flour (or oat flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup pumpkin puree (unsweetened)
  • 2 large eggs (or 2 flax eggs)
  • 1/3 cup maple syrup (or honey or coconut sugar)
  • 1/2 cup dark chocolate chips or chopped nuts (optional)

  • Instructions

    1. Preheat oven to 350°F (175°C).

    2. Line an 8×8 or 9×9-inch pan with parchment paper, leaving overhang.

    3. In a bowl, mix oats, almond flour, baking powder, salt, and spices.

    4. In another bowl, whisk together pumpkin puree, eggs, and maple syrup.

    5. Fold dry ingredients into wet until just combined.

    6. Stir in optional chocolate chips or nuts.

    7. Spread batter evenly in prepared pan.

    8. Bake for 25–30 minutes or until a toothpick comes out clean.

    9. Cool completely in pan before lifting out.

    10. Cut into 16 bars and serve.
