  • 4 bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme leaves
  • 1 pound baby potatoes halved
  • 1 cup cherry tomatoes
  • 1 lemon sliced
  • 1/4 cup chicken broth or dry white wine
  • salt and black pepper to taste

  • Instructions

    1. preheat oven to 400°F

    2. pat chicken thighs dry and season with salt and pepper

    3. heat olive oil in a 10-inch cast-iron skillet over medium-high heat until shimmering

    4. place chicken skin-side down and sear without moving for 5 to 6 minutes until golden

    5. flip chicken and sear for 3 more minutes

    6. add potatoes, garlic, rosemary, and thyme around chicken

    7. pour in broth or wine and scrape browned bits from pan

    8. arrange lemon slices and cherry tomatoes on top

    9. transfer skillet to oven and bake for 15 to 20 minutes until chicken reaches 165°F

    10. remove from oven and let rest 5 minutes before serving
