  • 6 medium yellow squash, sliced
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup milk
  • 2 tablespoons all-purpose flour
  • salt and black pepper to taste
  • 1 cup breadcrumbs or crushed butter crackers
  • 2 tablespoons melted butter

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

    2. In a large skillet over medium heat, melt 2 tablespoons butter.

    3. Add sliced squash and chopped onion; sauté for 8–10 minutes until tender, then drain excess liquid.

    4. In a bowl, whisk together eggs, sour cream, milk, flour, salt, and pepper until smooth.

    5. Stir in shredded cheddar cheese.

    6. Fold the cooked squash and onions into the creamy mixture and transfer to the prepared baking dish.

    7. In a small bowl, mix breadcrumbs with melted butter and sprinkle evenly over the casserole.

    8. Bake for 25–30 minutes, until bubbly and golden on top.

    9. Let rest for 5–10 minutes before serving.
