  • 2 cups sliced strawberries
  • 1/2 cup toasted pecans, roughly chopped
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 12 tablespoons extra virgin olive oil
  • 23 tablespoons balsamic glaze
  • salt to taste
  • freshly ground black pepper to taste

  • Instructions

    1. Rinse and dry the baby spinach leaves thoroughly.

    2. Slice the strawberries into even bite-sized pieces.

    3. Toast the pecans in a dry skillet over medium heat for 4 to 5 minutes until fragrant, then let cool.

    4. Thinly slice the red onion paper-thin and soak in cold water for 10 minutes if desired to mellow the flavor.

    5. In a large bowl, combine the spinach, strawberries, pecans, and red onion.

    6. Sprinkle the crumbled feta cheese over the salad.

    7. Drizzle olive oil and balsamic glaze over the ingredients.
