Description

This lightened sweet potato and pecan casserole combines creamy white sweet potatoes with crunchy candied pecans for a healthier twist on a Thanksgiving classic. Greek yogurt and coconut milk replace heavy ingredients to keep it smooth and flavorful.

  • 3 pounds white sweet potatoes, peeled and cubed
  • 1/2 cup plain low-fat greek yogurt
  • 1/4 cup maple syrup
  • 1/3 cup unsweetened coconut milk
  • 2 tablespoons light brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans, divided
  • 1/2 cup whole candied pecans
  • 1/4 cup rolled oats
  • 2 tablespoons melted butter or coconut oil
  • cooking spray or light oil for greasing

  • Instructions

    1. preheat oven to 350 degrees f

    2. boil sweet potatoes until tender then drain and cool

    3. mash potatoes until smooth

    4. stir in yogurt coconut milk maple syrup brown sugar cinnamon nutmeg salt and vanilla

    5. fold in half of the chopped pecans

    6. grease baking dish and spread potato mixture evenly

    7. combine remaining chopped pecans oats and melted butter or oil until slightly sticky

    8. spread topping mixture over potato base and arrange whole candied pecans on top

    9. bake for 30 to 35 minutes until topping is golden and edges bubble

    10. let casserole rest for 10 minutes before serving
