1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a skillet, melt butter over medium heat and cook diced onion until translucent, about 3 minutes.
3. Add turkey and mixed vegetables to the skillet, pour in chicken broth, and simmer for 2–3 minutes.
4. Season the mixture with garlic powder, dried thyme or parsley, salt, and pepper.
5. Spread the turkey and vegetable mixture in the baking dish and sprinkle 1/2 cup of cheese over it.
6. Evenly spread mashed potatoes over the cheese layer, then top with remaining cheese and breadcrumbs if using.
7. Bake uncovered for 25–30 minutes until bubbly and golden brown, then let rest 5–10 minutes before serving.
