1. Trim excess fat from the chicken and season with salt, pepper, and garlic powder.
2. Lightly coat the inside of the crockpot with butter or nonstick spray.
3. Place the seasoned chicken breasts evenly in the bottom of the crockpot.
4. In a bowl, whisk together the cream of chicken soup and chicken broth until smooth.
5. Pour half of the soup and broth mixture over the chicken.
6. Evenly layer the stuffing mix on top of the chicken and pour the remaining soup mixture over it.
7. Drizzle melted butter over the stuffing layer and scatter mixed vegetables if using.
8. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender and the stuffing is moist.
9. Allow the dish to rest, uncovered, for 10 minutes before serving to let the stuffing set.
