2. Season the chicken breast with salt, pepper, and paprika, then sear in olive oil for 3–4 minutes per side; let rest and dice.
3. Sauté onion and garlic in the same pan until fragrant, then add spinach and cook until wilted.
4. In a large bowl, combine cauliflower rice, cooked chicken, sautéed vegetables, chicken broth, heavy cream, cheddar cheese, salt, and pepper.
5. Spread the mixture evenly in a greased 9×13-inch baking dish.
6. Mix topping ingredients (shredded cheese, Parmesan, bread crumbs) and sprinkle over the casserole.
