Description

  • 4 cups cauliflower rice (fresh or thawed frozen)
  • 2 cups cooked chicken breast, diced
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste
  • 1/2 tsp paprika
  • 3/4 cup shredded cheese for topping
  • 2 tbsp grated Parmesan cheese
  • 1/4 cup bread crumbs or crushed almond flour crackers
  • 1 tbsp chopped fresh parsley

  • Instructions

    1. Preheat the oven to 375°F (190°C).

    2. Season the chicken breast with salt, pepper, and paprika, then sear in olive oil for 3–4 minutes per side; let rest and dice.

    3. Sauté onion and garlic in the same pan until fragrant, then add spinach and cook until wilted.

    4. In a large bowl, combine cauliflower rice, cooked chicken, sautéed vegetables, chicken broth, heavy cream, cheddar cheese, salt, and pepper.

    5. Spread the mixture evenly in a greased 9×13-inch baking dish.

    6. Mix topping ingredients (shredded cheese, Parmesan, bread crumbs) and sprinkle over the casserole.

    7. Bake for 25–30 minutes until the cheese is bubbly and golden; broil for 2–3 minutes if deeper browning is desired.

    8. Let rest for 5 minutes before serving, then garnish with chopped parsley.
