Description

Ingredients

  • 2 tbsp olive oil
  • juice of 1 lime
  • zest of 1 orange
  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • salt and black pepper to taste
  • 1 lb large shrimp peeled and deveined
  • 1 cup shredded cabbage
  • 1 avocado sliced
  • 1 tomato diced
  • 1/4 cup chopped cilantro
  • 1/4 cup Greek yogurt
  • 8 small corn or whole wheat tortillas

  • Instructions

    1. Whisk olive oil, lime juice, orange zest, garlic, paprika, cumin, chili powder, salt, and pepper to make the marinade.

    2. Toss shrimp in the marinade and refrigerate for 15 to 20 minutes.

    3. Preheat grill to medium high and grill shrimp 2 to 3 minutes per side until pink and slightly charred.

    4. Warm tortillas on the grill for 30 seconds per side.

    5. Spread Greek yogurt on each tortilla and layer with shredded cabbage, grilled shrimp, avocado, tomato, and cilantro.

    6. Serve immediately with lime wedges and extra cilantro.
