Fresh Chicken Noodle Soup

Description

This homemade stove top chicken noodle soup combines tender chicken, fresh vegetables, and egg noodles in a rich, comforting broth. It’s easy to make and perfect for chilly evenings.


Ingredients

  • 1 lb boneless skinless chicken breast or thighs
  • 2 tablespoons olive oil or butter
  • 1 medium onion chopped
  • 2 large carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 3 cups egg noodles uncooked
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • salt and pepper to taste

  • Instructions

    1. Heat olive oil or butter in a large pot over medium heat.

    2. Add onion, carrots, and celery and sauté for 5 minutes until softened.

    3. Stir in garlic and cook for 1 minute until fragrant.

    4. Add chicken pieces and season with salt and pepper, searing 2–3 minutes per side.

    5. Pour in chicken broth and add thyme and bay leaf, bring to a gentle boil.

    6. Reduce heat and simmer uncovered for 20–25 minutes.

    7. Remove chicken, shred with forks, and return to the pot.

    8. Increase heat to a low boil and add egg noodles, cooking 6–8 minutes until tender.

    9. Stir in parsley, adjust seasoning, and simmer 5 more minutes.

    10. Ladle into bowls and serve hot.
