  • 2 large ripe mangoes, peeled and diced
  • 1 ripe avocado, diced
  • 1 small cucumber, peeled and chopped
  • 1/4 cup finely chopped red onion
  • 1 small jalapeno, seeds removed and minced
  • 2 tablespoons fresh lime juice (about 12 limes)
  • 2 tablespoons chopped fresh cilantro
  • salt to taste
  • optional black pepper or chili flakes for heat

  • Instructions

    1. Dice mangoes by slicing off each side, scoring the flesh, and scooping out cubes.

    2. Peel and dice the avocado, add it to the bowl last to avoid browning.

    3. Chop cucumber, red onion, and jalapeno and combine with the mango and avocado.

    4. Squeeze fresh lime juice over the mixture and sprinkle in chopped cilantro and salt.

    5. Gently fold ingredients together, being careful not to mash the fruit and vegetables.

    6. Chill in the refrigerator for 15–20 minutes to allow flavors to meld before serving.
