A colorful and refreshing Mediterranean chickpea salad tossed with tangy feta, briny olives, crisp vegetables, and fresh herbs in a zesty lemon dressing.


Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • 3/4 cup crumbled feta cheese
  • 1/2 cup pitted and halved kalamata olives
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup finely chopped red onion
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh dill
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

  • Instructions

    1. Rinse and drain the canned chickpeas thoroughly

    2. Dice cucumber and halve cherry tomatoes, finely chop red onion

    3. Chop parsley, mint, and dill and set aside

    4. In a small bowl whisk together olive oil, lemon juice, minced garlic, salt, and black pepper

    5. In a large bowl combine chickpeas, cucumber, tomatoes, red onion, and herbs

    6. Pour the dressing over the salad and toss gently to coat

    7. Sprinkle the crumbled feta over the top and fold gently just before serving
