Instructions
1. heat olive oil in a saucepan over medium heat and sauté onion and garlic until translucent
2. add fresh peas and pour in vegetable stock to cover the peas
3. bring to a simmer and cook until peas are tender and bright green
4. remove from heat and stir in mint leaves and lemon herb blend
5. transfer mixture to a blender and purée until smooth
6. return soup to the saucepan and stir in lemon juice
7. season with salt and pepper to taste and warm gently before serving
