1. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
2. Season chicken cubes with salt, pepper, and paprika, then add to skillet in a single layer.
3. Cook chicken undisturbed for 3 minutes, flip and cook another 3 minutes until golden and cooked through, then transfer to a plate.
4. Reduce heat to medium, add remaining butter, then sauté minced garlic for 30 seconds until fragrant.
5. Add zucchini and cook for 3-4 minutes until crisp-tender, then stir in corn and cook 1-2 minutes.
6. Return chicken to skillet, toss with vegetables and garlic butter sauce, and heat through for 1-2 minutes.
7. Remove from heat, drizzle lemon juice if using, sprinkle with Italian herbs, and serve immediately.
