Instructions
1. Preheat oven to 400°F (200°C).
2. Marinate chicken with olive oil, garlic, smoked paprika, cumin, lime juice, salt, and pepper for at least 20 minutes.
3. In a skillet over medium heat, melt 2 tablespoons butter with a drizzle of olive oil and sear chicken 2–3 minutes per side until golden.
4. Remove chicken and melt remaining butter with garlic, scraping browned bits.
5. Place sweet potato cubes in a baking dish, drizzle garlic butter, and toss to coat.
6. Nestle seared chicken on top of potatoes and bake for 25–30 minutes until chicken reaches 165°F and potatoes are tender.
7. Let rest 5 minutes, garnish with cilantro, and serve.
