  • 6 chicken thighs bone-in skin-on
  • 4 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • juice of 1/2 lemon
  • salt to taste
  • black pepper to taste

  • Instructions

    1. Pat the chicken thighs dry with paper towels

    2. Season both sides of the chicken with salt, pepper, paprika and thyme

    3. Heat olive oil in a cast iron skillet over medium-high heat until shimmering

    4. Place chicken thighs skin-side down and sear without moving for 7–8 minutes

    5. Flip the thighs, reduce heat to medium, add butter and minced garlic

    6. Baste the chicken with the melted garlic butter and cook for 8–10 minutes until internal temperature reaches 165°F

    7. Squeeze lemon juice over the chicken and let rest for 5 minutes before serving
