Description

This easy one sheet pan dinner features tender chicken thighs roasted in garlic butter alongside caramelized sweet potatoes for a comforting and flavorful meal. Minimal prep and cleanup make it perfect for busy weeknights.

  • 6 chicken thighs
  • 2 large sweet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 4 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1 tablespoon fresh herbs (thyme or rosemary)
  • olive oil spray

  • Instructions

    1. Preheat the oven to 425°F (220°C).

    2. Line a sheet pan with parchment paper or coat with olive oil spray.

    3. Melt butter in a small saucepan, stir in minced garlic, then remove from heat.

    4. Toss chicken thighs with half the garlic butter, salt, pepper, paprika, and herbs.

    5. Toss sweet potatoes with remaining garlic butter, salt, and herbs.

    6. Arrange sweet potatoes on one side of the pan and chicken thighs skin-side up on the other side without crowding.

    7. Roast for 40 minutes, tossing potatoes and spooning pan juices over chicken halfway through.

    8. Optional: broil for 2–3 minutes to crisp the chicken skin.

    9. Remove from oven and let rest for 5 minutes before serving.
