  • 2 large sweet potatoes, diced into 1-inch cubes
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme or rosemary, chopped
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

  • Instructions

    1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment or foil for easy cleanup.

    2. In a bowl, whisk together melted butter, minced garlic, smoked paprika, chopped herbs, lemon juice, salt, and pepper, reserving 1 tablespoon for basting.

    3. Pat chicken thighs dry with paper towels and rub them generously with the garlic butter mixture.

    4. Toss sweet potato cubes with olive oil, salt, pepper, and the remaining garlic butter, then spread them evenly on the sheet pan beside the chicken.

    5. Roast on the middle rack for 30–35 minutes, turning the sweet potatoes halfway through. Chicken is done when it reaches 165°F (74°C).

    6. Brush the reserved garlic butter over the cooked chicken, garnish with parsley, and serve immediately.
