Instructions
1. Preheat oven to 425°F.
2. Pat chicken dry and remove giblets.
3. Mix butter with garlic, herbs, lemon zest, salt, and pepper.
4. Loosen skin and spread half the butter mixture under skin and the rest over the chicken.
5. Drizzle with olive oil and lemon juice.
6. Place chicken on rack in roasting pan and add stock to pan.
7. Roast 20 minutes at 425°F then reduce to 375°F and cook until internal temperature reaches 165°F, about 15–18 minutes per pound.
8. Baste occasionally with pan juices.
9. Remove chicken and tent with foil to rest 15–20 minutes.
10. Carve and serve with pan juices.
