  • 1 whole chicken (45 lbs)
  • 1/2 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, leaves stripped
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, halved and juiced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 carrots, cut into chunks
  • 3 potatoes, quartered
  • 1 onion, quartered

  • Instructions

    1. Combine butter, garlic, herbs, lemon juice, and olive oil until smooth.

    2. Loosen skin over breast and thighs, spread half of the butter mixture under the skin and rub the rest over the chicken.

    3. Stuff lemon halves and remaining herb sprigs into the cavity, then tie the legs with kitchen twine.

    4. Arrange carrots, potatoes, and onion in a roasting pan, drizzle with oil and season with salt and pepper, then place the chicken on top.

    5. Preheat oven to 425°F and roast chicken for 1 hour 20 minutes, basting with pan juices halfway through.

    6. Use a meat thermometer to ensure the thickest part of the thigh reaches 165°F.

    7. Remove from oven and let rest 10–15 minutes before carving and serving.
