3. Stuff lemon halves and remaining herb sprigs into the cavity, then tie the legs with kitchen twine.
4. Arrange carrots, potatoes, and onion in a roasting pan, drizzle with oil and season with salt and pepper, then place the chicken on top.
5. Preheat oven to 425°F and roast chicken for 1 hour 20 minutes, basting with pan juices halfway through.
