Description

Juicy bone-in pork chops seared golden in a hot skillet, then basted with garlic butter and herbs for a fast, flavorful weeknight dinner.

  • 4 bone-in pork chops, 1-inch thick (89 oz each)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder (optional)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp fresh thyme or rosemary, chopped
  • 1 tbsp fresh parsley, chopped
  • Lemon wedges, for serving (optional)

  • Instructions

    1. Pat pork chops dry; season both sides with salt, pepper, paprika, and onion powder.

    2. Heat a large cast-iron or stainless skillet over medium-high for 3–4 minutes; add olive oil until shimmering.

    3. Sear chops 3–4 minutes without moving until deeply golden on the first side.

    4. Flip; add butter, garlic, and thyme or rosemary. Tilt the pan and baste chops with garlic butter for 3–4 minutes.

    5. Check internal temperature; remove when it reaches 145°F (63°C). Rest on a plate 5 minutes.

    6. Spoon pan juices over, sprinkle with parsley, and serve with lemon wedges.
