1. Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
2. Heat olive oil in a skillet over medium-high heat and sear chicken 4–5 minutes per side until golden crust forms, then transfer to a plate and cover.
3. Melt 1 tablespoon butter in the same skillet, add potatoes cut side down, and cook 6–8 minutes until crisp and golden, stirring occasionally.
4. Nestle chicken back among potatoes, cover and cook 3–4 minutes until chicken reaches 165°F and potatoes are tender.
5. Reduce heat to medium, push chicken and potatoes to the sides, add remaining butter and garlic in center and cook 30 seconds until fragrant.
6. Sprinkle Parmesan cheese over chicken and potatoes, toss gently to coat in the melted garlic-butter sauce.
7. Garnish with chopped parsley and serve immediately.
