1. Preheat oven to 425°F and line a rimmed sheet pan with parchment paper or foil.
2. In a bowl, toss potatoes with half the olive oil, half the minced garlic, salt, pepper, herbs, and 2 tbsp Parmesan. Spread on one side of the pan.
3. In another bowl, coat chicken with remaining oil, garlic, salt, pepper, herbs, and Parmesan. Arrange on the other side of the pan.
4. Roast for 25 minutes, tossing potatoes halfway, until chicken reaches 165°F and potatoes are tender.
5. Broil for 2–3 minutes if desired for extra color and crispness.
6. Let chicken rest 5 minutes, then sprinkle parsley over chicken and potatoes before serving.
