Ingredients
- 2 lb boneless skinless chicken breasts
- 1.5 lb baby potatoes halved
- 4 cloves garlic minced
- 3/4 cup grated parmesan cheese
- 1 cup heavy cream
- 3 tbsp butter melted
- 1/2 cup chicken broth
- 1 tsp dried parsley
- 1 tsp italian seasoning
- salt and pepper to taste
- 1 cup baby spinach optional
- 1 cup sliced mushrooms optional
- 1/4 cup crumbled bacon optional
Instructions
1. Lightly grease the inside of a 6-quart slow cooker or use a liner.
2. Place halved potatoes in the bottom of the slow cooker and season with salt, pepper, and italian seasoning.
3. Arrange chicken breasts or thighs on top of the potatoes.
4. In a bowl, whisk melted butter, minced garlic, heavy cream, chicken broth, and grated parmesan until smooth.
5. Pour the sauce evenly over the chicken and potatoes.
6. Cover and cook on low for 6 hours or on high for 3–4 hours, avoiding lifting the lid.
7. During the last 30 minutes of cooking, stir in spinach or mushrooms if using.
8. Check that chicken reaches 165°F and potatoes are fork-tender, then gently stir to coat everything in sauce.
9. Serve immediately, optionally topped with extra parmesan or fresh parsley.
