1. Preheat oven to 325°F (163°C)
2. Crush gingersnap cookies into fine crumbs
3. Combine crumbs with melted butter, brown sugar, and cinnamon; press into bottom of a 9×9-inch pan
4. Bake crust for 8–10 minutes then cool slightly
5. Beat cream cheese until smooth then add sugar and mix until creamy
6. Blend in sour cream, vanilla, molasses, and ground ginger then add eggs one at a time mixing on low speed
7. Pour filling over cooled crust, smooth the top, and tap pan to remove air bubbles
8. Bake for 30–35 minutes until edges are set and center jiggles slightly
9. Cool in oven with door ajar for 10 minutes, then on a wire rack to room temperature
10. Refrigerate for at least 4 hours before slicing
