1. Heat olive or coconut oil in a soup pot over medium heat until shimmering
2. Add chopped onion and sauté until translucent and aromatic

4. Add chopped carrots and celery and cook until slightly softened
5. Pour in broth and bring to a gentle simmer then cover and cook for 20–25 minutes
6. Use an immersion blender for a smooth texture or leave the soup chunky
7. Stir in lemon juice, coconut milk if using, and season with salt and pepper
8. Fold in spinach, kale, chicken or chickpeas during the last few minutes of cooking and garnish with parsley or cilantro
