This spiced banana loaf combines ripe bananas with gingerbread spices and molasses for a tender, aromatic treat that brings holiday warmth to every slice.

1. Preheat oven to 350°F (175°C) and grease or line a loaf pan.
2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
3. In a large bowl, mash bananas then mix in brown sugar, molasses, melted butter or oil, egg or flax egg, milk, and vanilla until combined.
4. Gently fold the dry ingredients into the wet ingredients until no dry streaks remain.
5. Stir in optional mix-ins like nuts or chocolate chips.
6. Pour batter into the prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
7. Let the loaf cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
