2. In a large bowl, mix oats, pecans, coconut, cinnamon, and sea salt.
3. In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract.
4. Pour the liquid mixture over the dry ingredients and stir until everything is evenly coated.
5. Line a baking tray with parchment paper and spread the granola mixture in an even layer.
6. Bake for 25–30 minutes, stirring once halfway through, until golden and fragrant.
7. Remove from the oven and let the granola cool completely on the tray to form clusters.
8. Once cooled, stir in dried fruit if using and transfer to an airtight container for storage.
