1. Place peeled and chopped potatoes in a large pot and cover with cold water by 1 inch.
2. Add 1 tablespoon of salt and bring to a gentle boil, then reduce to a simmer and cook for 15–20 minutes until potatoes are fork tender.
3. Drain potatoes in a colander and let steam for 2–3 minutes to remove excess moisture.
4. Warm butter and cream together in a small saucepan over low heat until fragrant.
5. Pass potatoes through a ricer or mash gently in a warmed bowl until mostly smooth.
6. Slowly pour half of the warm butter and cream into the potatoes, stirring gently to combine.
7. Add rosemary, thyme, and parsley, folding some into the mixture and sprinkling the rest on top for garnish.
8. Season with salt and pepper to taste and serve immediately.
