Description

These Greek Chicken Gyro Lettuce Wraps deliver all the vibrant flavors of a traditional gyro in a lighter, low-carb package. Tender lemon-oregano chicken, crisp lettuce, fresh vegetables and creamy tzatziki come together in minutes for a healthy Mediterranean-style meal.

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons extra-virgin olive oil
  • juice of 1 lemon
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • salt and black pepper to taste
  • 1 cup plain Greek yogurt
  • 1/2 cucumber grated and squeezed
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove minced
  • 1 tablespoon fresh dill chopped
  • 8 large romaine lettuce leaves
  • 1 cup chopped tomatoes
  • 1/2 cup sliced cucumbers
  • 1/4 cup diced red onion
  • 1/2 cup crumbled feta cheese
  • optional sliced olives
  • optional chopped parsley

  • Instructions

    1. Whisk olive oil lemon juice garlic oregano thyme paprika salt and pepper in a bowl then add chicken and toss to coat and marinate for at least 30 minutes

    2. Preheat grill to medium-high and grill chicken for 5 to 6 minutes per side until cooked through and juices run clear

    3. Let chicken rest for 5 minutes then slice thinly against the grain

    4. Combine Greek yogurt grated cucumber lemon juice olive oil garlic and dill in a bowl season with salt and pepper and chill for at least 10 minutes

    5. Lay out lettuce leaves and fill each with sliced chicken chopped tomatoes cucumbers red onion and crumbled feta

    6. Drizzle each wrap with tzatziki sauce garnish with olives or parsley fold lettuce and serve immediately
