Greek Chicken Pasta Salad – Fresh Mediterranean Recipe for Dinner

  • 3 cups cooked pasta (penne, rotini, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • 2 chicken breasts, boneless and skinless
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • salt and pepper to taste
  • ¼ cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • juice of ½ lemon
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tbsp chopped fresh parsley

  • Instructions

    1. Pat chicken dry, rub with olive oil, oregano, garlic, salt, and pepper.

    2. Grill or pan-sear chicken over medium heat 6–7 minutes per side until cooked through, then rest and slice.

    3. Boil pasta in salted water until al dente, drain, and rinse under cold water.

    4. Slice tomatoes, dice cucumber, thinly slice onion, and halve olives.

    5. Whisk olive oil, vinegar, lemon juice, Dijon mustard, honey, parsley, salt, and pepper to make dressing.

    6. In a large bowl, combine pasta, chicken, vegetables, olives, and feta.

    7. Pour dressing over salad and toss gently until evenly coated.

    8. Serve immediately or chill for 30–60 minutes before serving; store leftovers in airtight containers for up to four days.
