  • 1 lb boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 large red bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1/2 medium red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp fresh parsley, chopped

  • Instructions

    1. Heat olive oil in a large skillet over medium-high heat.

    2. Add sliced chicken and season with salt, pepper, and oregano and cook until golden and cooked through.

    3. Remove chicken and set aside.

    4. Add garlic, onion, bell pepper, and zucchini to the skillet and stir fry until tender-crisp.

    5. Return chicken to the pan, add cherry tomatoes and lemon juice, and toss to combine.
