1. In a bowl mix olive oil, lemon juice, garlic powder, salt, and pepper and toss chicken to coat. Marinate for 20–30 minutes.
2. Heat a grill or grill pan over medium-high heat and grill chicken 5–6 minutes per side until internal temperature reaches 165°F. Rest 5 minutes, then slice.
3. For homemade dressing whisk together mayonnaise, Parmesan, Dijon mustard, garlic, Worcestershire sauce, and anchovy paste. Thin with water if needed and season to taste.
4. Lay tortillas flat and divide lettuce, sliced chicken, Parmesan, and dressing among them. Fold in sides and roll tightly from the bottom up.
5. Optional: Toast each wrap in a dry skillet 1–2 minutes per side until golden. Slice diagonally and serve with extra dressing.
