1. Whisk olive oil, balsamic vinegar, honey, garlic, salt, and pepper in a bowl and marinate chicken for 20–30 minutes.
2. Preheat grill or grill pan to medium-high and lightly oil grates.
3. Grill chicken 5–6 minutes per side until internal temperature reaches 165°F, then rest for 5 minutes and slice.
4. Simmer 1/4 cup balsamic vinegar in a saucepan over medium heat until syrupy, stirring in honey if desired, then cool.
5. Arrange greens on a platter, layer tomato and mozzarella slices, and tuck in chicken slices.
6. Drizzle balsamic glaze and a splash of olive oil over the salad, garnish with basil, and serve immediately.
